Description

This Bang Bang Fried Rice is a fiery, creamy, and irresistible Asian fusion dish loaded with chicken, veggies, and a bold spicy sauce.


Ingredients

  • 1 1/2 cups cooked rice (day-old preferred)
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • 1/2 cup diced carrots
  • 1/3 cup green peas
  • 2 cloves garlic, minced
  • 2 green onions, sliced (for garnish)
  • 23 tbsp soy sauce
  • 1 tbsp oil (plus more if needed)
  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp Sriracha
  • 1 tsp rice vinegar


Instructions

  1. Mix mayonnaise, sweet chili sauce, Sriracha, and rice vinegar to make the sauce.
  2. Cook chicken in oil over medium-high heat until browned, then set aside.
  3. Scramble eggs in the same pan, then set aside.
  4. Sauté carrots and garlic, then add peas.
  5. Add rice and stir-fry on high heat, breaking clumps.
  6. Return chicken and eggs, mix well.
  7. Add soy sauce and stir.
  8. Add bang bang sauce and toss to coat.
  9. Garnish with green onions and serve hot.

Notes

  • Day-old rice gives the best texture.
  • Adjust Sriracha to control spice level.
  • Swap chicken for shrimp or tofu if desired.
