Beef and Cheese Chimichangas are crispy, golden-fried or baked burritos filled with seasoned beef, refried beans, and melted cheese. A crunchy, cheesy Mexican-inspired favorite perfect for a hearty meal.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 oz taco seasoning packet
  • 1/2 cup salsa
  • 1 cup refried beans
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 6 large flour tortillas (burrito size)
  • 2 tbsp vegetable oil (for brushing or frying)

Instructions

  1. Cook Beef: Brown ground beef and onion in a skillet until fully cooked.
  2. Season: Drain excess fat, then add garlic, taco seasoning, and salsa. Simmer 3–4 minutes.
  3. Assemble: Spread refried beans on each tortilla, then add beef mixture and cheese.
  4. Roll: Fold sides and roll tightly into burritos.
  5. Cook: Bake at 400°F (200°C) for 18–20 minutes brushing with oil, or fry 2–3 minutes per side until crispy.
  6. Rest: Let cool for 2 minutes before serving.

Notes

  • Seal tortillas tightly to prevent filling from leaking.
  • Baking is lighter, frying gives extra crispiness.
  • Serve with sour cream, guacamole, or salsa.
