1 lb chicken breasts or thighs, sliced thin
1 tbsp light soy sauce
1 tbsp Shaoxing wine (or dry sherry)
1 tbsp cornstarch
1/2 cup chicken broth
2 tbsp light soy sauce
2 tbsp Shaoxing wine
2 tsp dark soy sauce
1 1/2 tbsp sugar
2 tsp coarsely ground black pepper
1/8 tsp salt
2 tbsp peanut or vegetable oil
1 tbsp minced ginger
2 cloves garlic, minced
1/2 white onion, chopped
2 bell peppers, chopped
Instructions
Mix chicken with soy sauce, Shaoxing wine, and cornstarch. Marinate 10–15 minutes.
In a bowl, combine all sauce ingredients and set aside.
Heat 1 tbsp oil in a skillet over medium-high heat.
Sear chicken in a single layer for 1–2 minutes until lightly browned. Remove.
Add remaining oil, then ginger and garlic. Stir until fragrant.
Add onion and bell peppers and stir-fry for 20–30 seconds.
Stir sauce mixture and pour into skillet.
Cook until sauce thickens slightly and coats a spoon.
Return chicken to skillet and toss to coat evenly.
Turn off heat and serve immediately.
Notes
Slice chicken thinly for best texture and quick cooking.
Freshly ground black pepper gives stronger flavor.
