4 boneless skinless chicken thighs or breasts, cut into chunks
2 tbsp soy sauce
1 tbsp dark soy sauce
2 tbsp brown sugar
4 cloves garlic, minced
2-inch fresh ginger, sliced
2 cups low-sodium chicken broth
1 tbsp vegetable oil
1 tsp sesame oil
1 small onion, sliced
2 green onions, chopped
Cooked white rice, for serving
Salt and pepper to taste
Optional red chili flakes
Instructions
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add chicken pieces and sear for 4–5 minutes until browned on all sides.
Reduce heat to medium and add onion, garlic, and ginger.
Sauté for 2 minutes until fragrant.
Sprinkle brown sugar over chicken and stir for 3 minutes until caramelized.
Pour in soy sauce and dark soy sauce. Stir to coat chicken well.
Add chicken broth and bring to a gentle simmer.
Cook for 10 minutes until chicken is tender and fully cooked.
Stir in sesame oil and season with salt and pepper.
Serve hot over rice and garnish with green onions.
