3–4 boneless skinless chicken breasts
Lo mein noodles (fresh or dried)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 carrots, thinly sliced
2 green onions, chopped
1/4 cup low-sodium soy sauce
1 tbsp sesame oil
3 cloves garlic, minced
Oil for cooking
Instructions
Cook lo mein noodles according to package directions. Drain and set aside.
Heat oil in a wok or large skillet over medium-high heat.
Cook chicken 6–8 minutes until golden and fully cooked. Remove.
Stir-fry bell peppers and carrots for 3–4 minutes until tender-crisp.
Return chicken to pan.
Add noodles, soy sauce, sesame oil, and garlic.
Toss everything together until evenly coated and heated through.
