Chicken Lo Mein is a quick and flavorful Chinese-inspired noodle dish made with tender chicken, fresh vegetables, and savory soy-based sauce tossed with soft lo mein noodles.

Ingredients

  • 34 boneless skinless chicken breasts
  • Lo mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • Oil for cooking

Instructions

  1. Cook lo mein noodles according to package directions. Drain and set aside.
  2. Heat oil in a wok or large skillet over medium-high heat.
  3. Cook chicken 6–8 minutes until golden and fully cooked. Remove.
  4. Stir-fry bell peppers and carrots for 3–4 minutes until tender-crisp.
  5. Return chicken to pan.
  6. Add noodles, soy sauce, sesame oil, and garlic.
  7. Toss everything together until evenly coated and heated through.
  8. Top with green onions and serve hot.

Notes

  • Do not overcook vegetables to keep texture.
  • Add a splash of water or broth if noodles stick.
  • Chicken thighs can be used for extra tenderness.
