Cowboy Butter Chicken Pasta is an easy, creamy, and flavor-packed dinner made with juicy chicken, garlic butter sauce, tender pasta, and parmesan cheese.

  • 12 oz pasta (penne or fettuccine)
  • 1 lb boneless skinless chicken breast, cubed
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • 1 tsp red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water, drain, and set aside.
  2. Melt 2 tbsp butter in a skillet over medium heat.
  3. Add chicken, season with salt and pepper, and cook 6–8 minutes until golden and cooked through. Remove.
  4. Add remaining butter to skillet.
  5. Sauté onion and garlic for 3–4 minutes until softened.
  6. Pour in heavy cream and chicken broth.
  7. Add Italian seasoning and red pepper flakes. Simmer 5 minutes.
  8. Return chicken and pasta to skillet. Toss well.
  9. Add pasta water if needed for consistency.
  10. Stir in Parmesan cheese, garnish with parsley, and serve warm.

Notes

  • Use shrimp instead of chicken for variation.
  • Adjust pepper flakes for heat preference.
  • Coconut milk can replace cream for lighter sauce.
