Description
A rich and creamy orzo dish made with cottage cheese, Parmesan, and eggs for a comforting, cheesy, and satisfying side or main dish.
Ingredients
- 2 large eggs
- 1 cup grated Parmesan cheese
- 1 cup whole milk cottage cheese (preferably Friendship Dairies)
- 1 lb (16 oz) orzo pasta
- 4 cups vegetable or chicken broth
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- In a mini food processor or blender, combine 1 cup cottage cheese, 1 cup Parmesan, 2 eggs, a pinch of kosher salt, and freshly ground black pepper. Purée until smooth and set aside.
- In a medium pot, combine 1 lb dried orzo with 4 cups vegetable or chicken broth. Place over medium-high heat and cook, stirring often, until liquid is absorbed and orzo is al dente (12-15 minutes).
- Remove from heat and stir in the cheese mixture until fully combined with the orzo.
- Taste and adjust seasoning with additional salt and pepper if needed. Serve hot.
Notes
- Use full-fat cottage cheese for the creamiest texture.
- This dish can be served as a side or a main with added vegetables or protein.
