A creamy 30-minute one-skillet pasta made with rotisserie chicken, broccoli, and a rich Parmesan cream sauce.

  • 1 lb penne pasta
  • 1 whole rotisserie chicken, shredded
  • 4 cups broccoli florets
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup Parmesan cheese
  • 1/2 cup mozzarella cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cook pasta in salted water; add broccoli in last 3 minutes.
  2. Reserve 1 cup pasta water, then drain.
  3. Sauté onion in butter and olive oil until soft.
  4. Add garlic and cook until fragrant.
  5. Pour in cream and broth; simmer gently.
  6. Remove from heat and whisk in cheeses until smooth.
  7. Stir in seasoning.
  8. Fold in pasta, broccoli, and chicken.
  9. Adjust consistency with pasta water if needed.
  10. Serve warm.

Notes

  • Add pasta water gradually for best sauce texture.
  • Use rotisserie chicken for quick prep.
