Description

Creamy Rotisserie Chicken Broccoli Pasta is a rich and comforting one-pan style dinner made with tender chicken, fresh broccoli, and a creamy Parmesan cheese sauce.


Ingredients

  • 1 lb penne pasta
  • 1 whole rotisserie chicken, shredded (about 4 cups)
  • 4 cups broccoli florets
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup Parmesan cheese
  • 1/2 cup mozzarella cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)


Instructions

  1. Boil pasta in salted water according to package instructions.
  2. Add broccoli during the last 3 minutes of cooking.
  3. Reserve 1 cup pasta water, then drain pasta and broccoli.
  4. Heat olive oil and butter in a large skillet.
  5. Sauté onion for 4–5 minutes until soft, then add garlic for 30 seconds.
  6. Add cream and chicken broth and simmer for 2–3 minutes.
  7. Remove from heat and whisk in Parmesan and mozzarella until smooth.
  8. Season with Italian seasoning, garlic powder, salt, pepper, and red pepper flakes.
  9. Add pasta, broccoli, and shredded chicken. Toss to combine.
  10. Use reserved pasta water if needed to adjust sauce consistency.
  11. Serve warm and creamy.

Notes

  • Rotisserie chicken saves time and adds flavor.
  • Don’t overcook broccoli to keep texture.
  • Add more cheese for extra creaminess.
