Ingredients
- 4 boneless, skinless chicken breasts
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 tsp salt
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 1/2 cups whole milk
- 1/2 cup chicken broth
- 1/2 tsp garlic powder
- 1/4 tsp thyme
- 1/2 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Season chicken with spices, then sear in olive oil until golden. Set aside.
- Cook rice in chicken broth and salt until tender, then fluff.
- Melt butter, whisk in flour, and cook 1–2 minutes.
- Slowly add milk and broth, whisking until smooth.
- Add seasonings, cheddar, and Parmesan. Cook until thick and creamy.
- Return chicken to skillet and spoon sauce over it. Simmer covered for 10 minutes.
- Serve chicken over rice and garnish with parsley.
Notes
- Whisk sauce continuously to avoid lumps.
- Use freshly grated cheese for best melt.
- Add extra broth if sauce becomes too thick.
