  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 tsp salt
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup chicken broth
  • 1/2 tsp garlic powder
  • 1/4 tsp thyme
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Season chicken with spices, then sear in olive oil until golden. Set aside.
  2. Cook rice in chicken broth and salt until tender, then fluff.
  3. Melt butter, whisk in flour, and cook 1–2 minutes.
  4. Slowly add milk and broth, whisking until smooth.
  5. Add seasonings, cheddar, and Parmesan. Cook until thick and creamy.
  6. Return chicken to skillet and spoon sauce over it. Simmer covered for 10 minutes.
