1/2 cup finely diced onion
1 red bell pepper, diced
1 cup uncooked parboiled long-grain rice
3 tbsp fajita seasoning
1/8 tsp cayenne pepper (optional)
1 cup frozen corn kernels
1 can black beans, drained and rinsed
5 cups shredded cooked chicken
3 cups chicken broth
1 can mild green chilies (4 oz)
1 tbsp olive oil
2 tbsp tomato paste
1 1/4 cups Monterey Jack cheese, shredded
Instructions
Preheat oven to 400°F (200°C).
In a 9×13 baking dish, combine onion, bell pepper, rice, fajita seasoning, and cayenne.
In a bowl, whisk chicken broth, green chilies, tomato paste, and olive oil.
Pour broth mixture into baking dish and stir well.
Add chicken, black beans, and corn. Mix until evenly combined.
Cover with foil and bake for 65–70 minutes until rice is cooked.
Remove foil, sprinkle cheese on top, and bake 5–10 minutes more until melted.
Let rest 5–10 minutes before serving.
Optional: top with cilantro, salsa, or avocado.
Notes
Use rotisserie chicken for convenience.
White rice can be substituted for brown rice (adjust cooking time).
