This Mango Slaw is a refreshing, crunchy, and slightly sweet Asian-inspired side dish made with ripe mangoes, crisp vegetables, and a tangy lime dressing.

Ingredients

  • 2 ripe mangoes, peeled and diced
  • 2 cups green cabbage, finely shredded
  • 1 large carrot, grated
  • 1 red bell pepper, thinly sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 3 tablespoons lime juice
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine mangoes, cabbage, carrot, bell pepper, red onion, and cilantro.
  2. Mix gently until evenly combined.
  3. In a small bowl, whisk lime juice, honey (or maple syrup), sesame oil, salt, and pepper.
  4. Pour dressing over slaw and toss to coat evenly.
  5. Let sit 5–10 minutes for flavors to blend.
  6. Serve chilled or at room temperature.
