19 oz frozen cheese tortellini
1.5 lbs boneless skinless chicken breast, cubed
2 tbsp olive oil
2 tbsp butter
3 tsp garlic, minced
1/2 cup sun-dried tomatoes, sliced
1 cup chicken broth
2 cups heavy cream
1 cup parmesan cheese, shredded
2 cups baby spinach, chopped
1 tsp Italian seasoning
1/2 tsp black pepper
1/2 tsp paprika
Instructions
Season chicken with pepper, Italian seasoning, and paprika.
Heat olive oil in a large skillet over medium-high heat.
Cook chicken 6–8 minutes until golden and cooked through. Remove and set aside.
Lower heat to medium-low and melt butter in the skillet.
Sauté garlic and sun-dried tomatoes for 30 seconds.
Add chicken broth, heavy cream, Italian seasoning, pepper, and paprika.
Bring to a gentle simmer, then whisk in parmesan until smooth.
Add chicken, spinach, and tortellini to the skillet.
Stir and simmer 5 minutes until spinach wilts and tortellini is heated through.
Serve hot and garnish with extra parmesan if desired.
Notes
Add red pepper flakes for a spicy version.
Let sit 2–3 minutes before serving to thicken sauce.
