  • 1 (16 oz) jar pepperoncini peppers, drained (reserve 1/4 cup juice), chopped
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • Seasoning
  • 1 tbsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • Salt and black pepper to taste
  • Garnish & Serving
  • 2 tbsp fresh parsley, chopped
  • Optional: cooked pasta or rice

Instructions

  1. Season chicken with salt and pepper and brown in olive oil until cooked through. Set aside.
  2. Sauté onion until softened, then add garlic and cook briefly.
  3. Add pepperoncini juice and scrape pan.
  4. Stir in chopped peppers, broth, Italian seasoning, and red pepper flakes. Simmer 5 minutes.
  5. Add cream and return chicken to skillet.
  6. Simmer until sauce thickens.
  7. Garnish with parsley and serve over pasta or rice.
