Description

This one-pan honey garlic kielbasa and veggies is a quick, flavorful, and family-friendly meal with sweet and savory roasted goodness.


Ingredients

  • 1 lb kielbasa, sliced
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup baby carrots
  • 1 lb baby potatoes (or sweet potatoes)
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley or green onions (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Combine kielbasa, bell peppers, carrots, and potatoes in a large bowl.
  3. Drizzle olive oil, honey, soy sauce, and garlic over the mixture.
  4. Toss well until everything is evenly coated.
  5. Spread onto a parchment-lined baking sheet in a single layer.
  6. Roast for 20–25 minutes, stirring halfway through.
  7. Cook until vegetables are tender and kielbasa is caramelized.
  8. Remove from oven and garnish with parsley or green onions.
