Description

This Potsticker Noodle Bowl is a quick, savory stir-fry inspired dish featuring tender noodles, seasoned pork, and a flavorful Asian-style sauce with crisp coleslaw mix.


Ingredients

  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 1 tbsp peanut oil
  • 1 lb ground beef
  • 1/4 cup + 2 tbsp sliced green onions
  • 1/2 cup low-sodium chicken broth
  • 3 tbsp mirin
  • 2 tbsp dark soy sauce
  • 1 tbsp minced garlic
  • 2 tsp grated ginger
  • 1 tsp sesame oil
  • 1/2 tsp sriracha
  • 4 cups coleslaw mix


Instructions

  1. Cook noodles according to package instructions, rinse, and set aside.
  2. Heat peanut oil in a large skillet and brown ground beef with 1/4 cup green onions.
  3. In a bowl, whisk together chicken broth, mirin, soy sauce, garlic, ginger, sesame oil, and sriracha.
  4. Add noodles, coleslaw mix, and sauce to the skillet.
  5. Toss everything together and cook for 2–3 minutes until well coated and heated through.
  6. Garnish with remaining green onions and serve hot.

Notes

  • Use fresh ginger for best flavor.
  • Add chili oil for extra heat if desired.
