Shakshouka Toast is a hearty breakfast inspired by classic shakshuka, featuring spiced tomato sauce and perfectly cooked eggs served over crispy toasted bread.

Ingredients

Scale
  • 2 slices of hearty bread (sourdough or whole wheat)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 large eggs
  • Fresh parsley or cilantro, chopped (for garnish)
  • Feta cheese (optional, for garnish)

Instructions

  1. Toast bread slices to your desired crispness and set aside.
  2. Heat olive oil in a skillet over medium heat.
  3. Add onion and bell pepper, sauté for about 5 minutes until softened.
  4. Add garlic, cumin, paprika, and cayenne pepper. Cook for 1 minute until fragrant.
  5. Pour in diced tomatoes with juice. Season with salt and pepper.
  6. Simmer for 8–10 minutes until slightly thickened and flavorful.
  7. Create two wells in the sauce and crack an egg into each well.
  8. Cover skillet and cook 5–7 minutes until whites are set and yolks are cooked to preference.
  9. Place toast on plates and spoon shakshouka mixture over top.
  10. Garnish with parsley or cilantro and feta cheese if desired. Serve warm.

Notes

  • Use crusty bread for the best texture.
  • Add spinach or mushrooms for extra vegetables.
  • Cook eggs longer for firmer yolks.
