12 oz rotini pasta
14 oz smoked sausage, sliced
1 1/2 cups white cheddar cheese, shredded
1 packet ranch seasoning
2 cups milk
2 cups chicken broth
2 tbsp butter
3 cloves garlic, minced
2 cups baby spinach
1/2 cup roasted red peppers, chopped
1 tbsp olive oil
Salt and pepper to taste
Instructions
Heat olive oil in a large skillet and brown sausage slices. Remove and set aside.
Melt butter and sauté garlic until fragrant.
Add chicken broth, milk, and ranch seasoning. Bring to a simmer.
Add pasta and cook covered until al dente, stirring occasionally.
Stir in white cheddar until melted and creamy.
Add spinach and roasted red peppers and let spinach wilt.
Return sausage to skillet and mix well.
Season with salt and pepper and serve warm.
Notes
Stir pasta frequently to prevent sticking.
Add extra broth if sauce thickens too much.
Fresh spinach can be swapped with kale if preferred.
